makes: approximately 1 ½ 4 kg
1 ¼ kg mutton, gole boti (round pieces)
1 cup water
2cups mustard oil
50 gm adrak (ginger) paste
50 gm lahsun (garlic) paste
3 tsp lal mirch (red chilli powder)
3 tsp zeera (cumin seed) powder
2 tsp garam masaal, powdered
200 gm vinegar
Juice of 4 lemons
1 tsp sugar
4 tbsp salt
Put the meat pieces washed thoroughly in a cooker, add water and salt Pressure cook it for 2 minutes open and cook till the water dries out.
Heat oil and fry the mutton till brown. Take out the fried pieces.
In the same oil fry lahsun - adrak paste add the dry masala, vinegar lemon juice and sugar. Then add the meat pieces. Cook it for 3 minutes.
Let it cold and then store in a clean day jar.
