Ingredients:
1 kg firm marimba mangoes, peeled and grated
1 kg sugar
100 gm or less garam masala, ground
75 gm or less lal mirch (red chilli), powdered
¼ tsp hing (asafoetida)
50 gm adrak (ginger), chopped and dried for few hours in the shade
15 stems fresh pudina (mint) leves, dried and powdered
1 cup vinegar
100 gm salt
Method:
Mix the grated mango sugar garam masala, lal mirch and hing.
Add adrak, Podina, vinegar and salt
Keep it in the sun for 10 days.
Note:
The shelf life is 2 years, if the chutney is taken out with a dry spoon every time. Keep the jar tightly shut.
