Ingredients:
½ kg lemon juice
1 ¼ kg sugar
3 1/2cups water
A pinch of potassium metabisulphite if required.
Method
Strain the lemon juice. Keep aside
2. Boil the sugar and water to make syrup. Remove the scum. The syrup should spin 1- thread.
3. Now let the syrup cool down. Add the lemon juice and stir thoroughly.
4. Pour into dry and clean bottles with tight lids.
Note
1. Kg or more of fresh lemons will give ½ kg lemon juice.
If you want to store for about 6-8 months, then add a pinch or two of potassium metabisulphite to the main mixture. The freshness and colour will not change. For extra freshness, if you are serving after 2-3 months add a few drops of fresh lemon in the glass. Serve chilled with water or soda. The soda will make it taste like lemonade or Sprite.
